This Cucumber, Onion, Garlic, and Dill Salad is a crisp seasonal favorite, perfect for warmer days when you want something light, cooling, and full of flavor.

Ingredients

  • 2 medium cucumbers, thinly sliced

  • 1/2 red onion, thinly sliced

  • 1 tbsp fresh dill, chopped

  • 2 garlic cloves, minced

  • 2 tbsp toasted pumpkin seeds

Instructions

  1. Place the sliced cucumbers and red onion in a bowl. Add the chopped dill and minced garlic.

  2. Sprinkle the toasted pumpkin seeds over the vegetables.

  3. Toss with a light lemon and olive oil dressing (recipe in meal helpers section) just before serving.
